Jennie's Recipe Reviews: Chicken and Gravy


I love an easy slow cooker recipe and this one was easy and delicious. Slow Cooker Chicken and Gravy was definitely a winner for us.

Basically, you just mix broth and gravy mix, toss the chicken in, turn the slow cooker on high and let it go.

I served it over mashed potatoes and it was perfect!

Jennie's Recipe Reviews: Chicken Pot Pie Soup


I have never been a pot pie fan. I'm not sure why...ok...it's the peas.

I tried to make it once and it didn't really turn out, so I never went back to it.

But when I started seeing Chicken Pot Pie Soup recipes pop up in my feeds, I knew I had to try it. So I chose this recipe Pinch of Yum and we loved it. (And the leftovers were even better!!!)

I did struggle to get the soup to thicken the first night...but that is probably because I used 2% Lactaid instead of heavy cream.

I liked the idea of using a cookie cutter for a fun shape, but then all I could find was a Christmas tree and a snowflake, so I used the snowflake.

Motivational Monday: Forward is Forward



In the past, I let myself get discouraged because I felt like I wasn't making progress. My discouragement could derail me for months at a time, sometimes years at a time.

When I started this year and launched my 18 for 2018 project, I realized that even though I don't cross an item off the list every month, I can work toward the items on my list. For every item on my list, I have tangible steps I can take.

Here is an example:
Remodel Bathroom
Step 1: Save Money for Remodel
Step 2: Lock Down Design for Remodel
Step 3: Find a Contractor and Get a Quote
Step 4: Negotiate Quote
Step 5: Go!

Right now, I am stuck on step 4...

But, I am trying to not allow myself to be discouraged. I have made progress. I have the funds to complete the project. I have the fixtures chosen for the project. I have a contractor. I have the original quote. I am just waiting on some changes I asked him to make to lessen the sting of his quote.
